
This chunky soup is almost too delicious, hot or cold. If you have leftover ingredients from another recipe, this is a great way to use up beef, bread crumbs, and onion in a new way. Yields 20 servings.
4 quarts chicken broth
2 eggs, beaten
1 ½ pounds extra-lean ground beef
½ cup bread crumbs
2 tsp dried basil
6 tbsp minced onion (½ small onion)
2 cups spinach, packed, rinsed and thinly sliced
1 cup seashell pasta
¾ cup diced carrots
2 tbsp grated Parmesan cheese
