Kladdkaka with Whipped Cream

Kladdkaka with Whipped Cream

Bready but very chocolatey and dense, this cake is a new but sweet way to experience Swedish food. Our friend from Sweden, Lotta Gemfors, shared the recipe with us.

Ingredients

½ cup butter

1 cup sugar

2 eggs

¾ cup flour

2 tbsp cocoa

1 tsp vanilla extract

4 cups heavy whipping cream

1 tbsp sugar

Directions

  1. Preheat oven to 350 degrees.
  2. Melt butter in a microwave-safe bowl in the microwave.  Do not burn!
  3. In a large bowl crack eggs. Lightly whisk.
  4. Add butter and remaining ingredients except heavy cream and sugar. Mix together with the whisk just until combined. Do not mix too much.
  5. Butter a baking dish or cake pan. Add the batter evenly to the pan.
  6. Bake in the oven for 20 minutes.
  7. While baking, use an electric mixer to beat the whipping cream and sugar until soft peaks form.
  8. Once cake is done, slice into 6 pieces and serve with a dollop of whipped cream and cocoa sprinkled over it.
