Gourmet Breakfast Casserole

Gourmet Breakfast Casserole

Simply delicious! Fresh shredded potatoes and onions make the difference in this breakfast casserole.

Ingredients

½ pound sliced bacon
½ cup chopped onion
½ cup chopped green pepper
12 eggs
1 cup milk
1 pound of hash browns
1 cup shredded cheddar cheese
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon dill weed
1 tablespoon cooking oil

Directions

  1. Preheat oven to 350°.
  2. Begin cooking bacon on the skillet with the assistance of an adult.
  3. Chop the bell pepper and onion into small chunks, set aside
  4. Grate cheddar cheese
  5. Chop bacon into small pieces once cooled
  6. Using the skillet the bacon was cooked in (do not wash before hand), set on a burner, and turn on medium-high heat.
  7. Add diced onion and diced bell pepper to pan. Sauté for about 5 minutes
  8. In a large bowl, crack and add 12 large eggs.
  9. Add  milk to large bowl and whisk the eggs and milk together thoroughly (2-3 minutes)
  10. Add to the egg mixture: hash browns, bacon, green pepper, onion, grated cheese, dill weed, salt, and pepper. Mix.
  11. Transfer mixture to a greased baking pan.
  12. Bake the mixture for 35-45 minutes or until cooked
